Dinner tonight was one of the best there is: simple, fresh and delicious. Fresh, local buffalo burgers on the grill, grilled corn on the cob, and the I’m-not-exaggerating-when-I-say-I-could-eat-this-every-day-of-my-life caprese salad.
There’s nothing like fresh tomatoes, and soft, salty mozzerella, topped with salt and pepper, a little balsamic vinegar and my new favorite thing, basil infused oil.
I know this is an unpopular statement, but, I’m not really a huge fan of big, fresh basil leaves. I know, I know, heresy! It’s not that I don’t love basil, it’s just that I don’t like biting into a whole leaf… So, this infused oil gives you the yumminess of fresh basil, without the big basil leaf!
See the green drizzle on there? That’s the basil oil. Good stuff. Really good stuff. Like I would eat it with a spoon if I didn’t know better good.
It’s really easy to make, too. Two ingredients: a couple of small handfuls of fresh basil and a half cup of olive oil. Give it a whirl in the food processor (or blender), warm to a simmer on the stove for 5 minutes, strain and refrigerate any leftovers in an airtight container. Recipe from How Sweet It Is, fair warning, you may get stuck on that site for a while. I don’t think there are too many recipes (and pictures!) that don’t look amazing!
And then there’s the corn on the cob. With the heat wave around here, I hate to turn on my stove or oven if I don’t have to, so the corn gets a few minutes soaking in the sink, then popped on the grill for about 15-20 minutes. Easy peasy!
No pics of the buffalo burgers, ’cause the pictures didn’t look very appetizing, but trust me, they were great! We don’t really eat a whole lot of beef anymore, if we make burgers, they’re almost always buffalo meat. Leaner, more flavorful, I highly recommend it if you’ve never tried it!
